I had a package of U-8 shrimp that had been around for months. There were only 6 shrimp in it, yet it weighed 15 ounces.

I made ATK's tempura.

One thing out of the freezer!

Since my last post, I pulled a piece of flap meat and a package of frozen unbaked tortillas. Make some awesome fajitas.

Last night I dug out a pork loin and roasted it. Along with it, I roasted carrots in duck fat. I always forget that I have a jar of rendered duck fat in the back of the fridge, so bringing it forward is a major accomplishment! The carrots were lucious!

So far out of the freezer:
1# shrimp
3.5# pork loin
1# flap meat
1 package tortillas



Off to a good start.

Tonight I am using chicken from the freezer, cooked rice from the freezer, along with a salad of that new thing that Costco has - the artisan lettuce collection - with homemade croutons and orange sections. Add some cranberry/apple sauce (the cranberries were frozen when I made that).

So I calculate a total of three freezer points. :geek:

I usually cook from the freezer, only doing fresh when I have recenly shopped or when something just should not be frozen.

This week I took out a pork tenderloin, a couple hamburgers, chipotle, and some frozen roasted veggies. I put in goulasch soup and slices of banana bread (an attempt at portion control).

After seeing Kathy's post, I remembered that I really need to make that osso bucco... are you busy Amy?

Found some grilled lamb in the freezer, already sliced and ready to heat...it was yummy; I made a faux Greek wrap with yogurt, tomatoes, oregano, a little olive oil , calamata olives and some shredded lettuce. It was a good dinner from the freezer.
