Well, we made the July, 1993 CI recipe for chocolate ice cream and it came out superb. Häagen-Dazs or so my wife said after tasting a spoonful. Which some don't love, I know, but I really like. We followed CI pretty closely. Our variations were:
1) UHT heavy cream since that is all there is here.
2) Madagascar and Tahitian vanilla beans, one each since we made a double batch, was substituted for the specified vanilla extract.
3) Indonesian dark chocolate, CI called for Callebaut which just returned to our local baking supply store after a long absence, but there was some Indonesian dark chocolate sitting around and it sure worked perfectly in this recipe.
It came out rich and smooth and ever so tasty. Color me seriously pleased.
