Post subject:  Dark Chocolate Cupcakes - Cook's Illustrated
I made these last night with a little extra liquid and some espresso powder. Frosted them with a dark chocolate ganache. Delicious! Next time I may increase the ingredients, and make them as a 9" cake.

Is this the recipe with the ganache centers? Or a different one? I can't keep track of all their recipes...

I just finished the batter for the chocolate cupcakes from Joanne Chang's Flour cookbook. Looking forward to seeing how these turn out - I usually make one of CI chocolate cupcakes. May also try that "crispy" frosting in her book.

Edited to add: Joanne Chang's cupcakes are very good. However, the recipe specified 30 minutes baking time. Mine were done in 17 minutes. I can't imagine baking a cupcake for 30 minutes.

No, these don't have the ganache centers, but I frosted them with a dark chocolate ganache. The recipe with the ganache centers is called "Ultimate Chocolate Cupcakes."
