 Post subject: best coconut cream pie ever... so far

Well I thought I'd never find a coconut cream pie I liked better than Joanne Chang's recipe, but this one topped it. Looks like the recipe's been online for years but I happened to just see it on the SLT blog. Made it yesterday and between baking it in a glass dish, coconut in the crust, and rolling it out to 1/8" thickness, it was the best crust ever. And the filling was amazing -- perhaps because you cook it with the coconut? Most recipes usually add the coconut after the pastry cream is made. The white chocolate shavings on top were a delicious addition too.

Anyway, if you're a coconut pie lover, it's probably right up your alley!

I bought the ingredients to make this pie this weekend. I haven't made a Coconut Cream Pie in years and this one looks very good. Thanks for posting the recipe.

Thanks Linda! Todd, please report back on how you love it or don't love it. The best thing of all for me was that I didn't have any crust issues whatsoever. It was crispy but not too hard, and didn't slump. And the coconut for the top (I bought Bob's Red Mill) for once didn't get really crunchy before it was lightly browned. Maybe because it's unsweetened?

Anyway, I've been in the serious doghouse because of it. I made it for a dinner at my brother's this past Tuesday and he assumed I would be leaving the half that wasn't served. I did leave him two large slices but according to him that wasn't nearly enough. I guess that's a good problem to have but he won't let me hear the end of it!
