Pistachio Champagne Cake
1 Duncan Hines Deluxe cake mix (white or yellow)
1 4oz. pkg. pistachio pudding
4 eggs
1/2 c. vegetable oil
1 c. club soda
1/2 c. chopped walnuts or pistachios
Mix together first five ingredients. Fold and nuts. Pour into greased and floured tube pan. Bake 1 hour at 350 degrees.
Frosting:
1 Envelope Dream Whip
1 small package pistachio pudding
1½ cups cold water or milk
4 oz. cream cheese.
Mix, whip, and frost cooled cake.
The good news is that Wegmans still carries Dream Whip. The bad news is that Rita has fond memories of this cake and wants to make it again.
I have this recipe, but it the one I have uses 7-Up and it's called "Watergate Cake." Don't know why, though.
