Here is a Halloween decoration I am working on. This was just the first try, so I have to work on the color; though the color is a lot like the blocks of blood I see in the Asian market, it's not as much like the actual brains. Needs more pink, and less brown, and some milk added for the opaque effect. I got the amount of agar right; maybe I'll just re-dissolve this, add more water (the mold holds 3 1/2c, while this was just 1c), and go from there. Anyone else make brains before?

This is closer to what the real, raw ones look like, but it's a bit too pink now. Closer to full sized mold, this time.

Those don't look like the light pink veal brains that were served when I was a kid.
I was a lucky kid eating sweet breads, boiled beets and creamed can of asparagus jello.

Pork brains are much darker than veal brains, which makes sense, as it is darker in the muscle cuts, as well. It's been years since I cooked any, and I was just talking to a friend of mine about getting some sweetbreads when he visits, because the last time both of us had them was when we cooked them here in the mid-80's. OMG, that was a long time ago!
