Been wanting to get around to trying this, so I finally did; Sous vide scrambled eggs. I largely followed this guide, including using the basil (was outta chives, which is the norm). Awesome. Very creamy, very lovely, will definitely make again.

Done sous vide scrambled eggs a number of times...really good. And, they hold, unlike regular scrambled eggs.

Lately I've just been cracking eggs directly into a hot buttery skillet and stirring like crazy. Amazingly good. This started when I ran out of dogfood and thought I'd give the dogs a treat of scrambled eggs and was surprised at how good they looked. fitzie

Fitzie- Making scrambled eggs that way is not only quick but also saves a "scrambling" bowl. I've been making my scrambled eggs like that for awhile, stirring with chopsticks (I think that idea came from our friends at ATK but cannot be certain). The sous vide scramble sounds interesting as does everything sous vide. 18 minutes for scrambled eggs -- they better be awesome !

SV usually involves longer elapsed total time then other methods but takes less of *your* time. In addition, it typically permits much more time flexibility ( though not in this case). In this case, it will be 18 min of elapsed cooking time, but under 2 (probably under 1) minutes of your time, with no monitoring. But it definitely is not for breakfast in a short period of time.

Actually Ivy, when I do scrambled eggs SV I do them at 180 degrees for a half hour. I just squish the bag every ten minutes or so. They do come out awesomely well, and require virtually no attention, so in my mind, they are most definitely worth it.
