I've been doing SV baby turnips (that time of year, especially around here), ala
Under Pressure. These are really really good and don't even have a hint of those turnips your mom fed you.

Totally worth a try. Basically cut them in quarters, peel, cut off sharp edges, toss with some duck fat and a pinch of salt and sugar, bag, sv @ 85C @ 35 min, chill, reheat by glazing (put in pan with a bit of stock, heat till stock disappears and turnips glaze). I've even put them (cold) in salads. I never knew turnips could be so good!
