I think I may have found a processor that will sell me chicken skins so I can make Fried Chicken Skins with Smoked Honey . I have read several recipes including this one.
http://www.eatthelove.com/2015/02/fried-chicken-skins/ I'm not too sure about dredging the skins in flour, but I do like how he smoked the honey. I am thinking I might just simmer the skins for a few minutes and then let them cool overnight in the fridge to dry out before deep frying. Any thoughts?
