I have a very productive Meyer lemon tree and I'm always looking for recipes to use them. I found a Meyer lemon loaf recipe that I want to try. It makes 2 8-inch loaves and calls for 2 Tbsp. of rum. I only have coconut rum on hand. Would coconut rum really change the taste in a negative way or should I just omit it altogether? I don't really want to buy a whole bottle of rum since I would never use it. If I do omit the rum should I increase the lemon juice? The recipe calls for 1 1/2 Tbsp of lemon juice.

I think the coconut rum would be fine. coconut and lemon work well together, imo.
