I bought some to make CI's light chicken Caesar dressing but have a bunch left. I usually make pancakes or pretend I am going to make pancakes until the carton starts to bulge and I toss it. What else is there to do with buttermilk?

Biscuits
Buttermilk chocolate tarts (I have a recipe at home if you are interested)
Cake - substitute buttermilk for milk, add a little extra baking soda
Chicken fried steak
Cornbread
Michael Ruhlman's dinner rolls

You can also freeze the buttermilk so you can pretend you are going to make pancakes almost indefinitely.

Those rolls look fantastic.

I have never made fried chicken... probably something I should put on my bucket list (get it... fried chicken/bucket).

I also like the freezer idea. I should probably do it in 1/4 cup servings for that salad dressing.

I'd add -- Bread
Coleslaw dressing and other creamy dressings like peppercorn or blue cheese
Mashed potatoes

Those rolls are great. Even I (a non bread baker) can make them. Easy peasy.

I think you can sub buttermilk for milk in almost any recipe.

I just love a cold glass of buttermilk with lots of pepper in it....learned that from my father and still love to drink it.

ranch dressing
the buttermilk marinated roasted chicken from the NYT's
biscuits- I love CI's drop biscuits!
pancakes
cakes- I love a buttermilk based cake. Dorie has a great one.
Mashed potatoes are a great idea from above.
homemade creme fraiche
Yes to the cornbread! I prefer (1 cp cornmeal, 1 cup flour, 1 tablespoon baking powder, 2 teaspoons sugar, 1 teaspoon salt, whisked together. 1/4 cup oil or bacon fat heated in CI skillet at 450. Whisk 1 egg with 1 1/8 cup buttermilk. Whisk into dry ing. Pour half of hot oil into batter and stir in, then pour the batter in the pan. Cook until brown around the edges.)
