Post subject: | Buttermilk |
I bought some to make CI's light chicken Caesar dressing but have a bunch left. I usually make pancakes or pretend I am going to make pancakes until the carton starts to bulge and I toss it. What else is there to do with buttermilk? Mary |

Biscuits Buttermilk chocolate tarts (I have a recipe at home if you are interested) Cake - substitute buttermilk for milk, add a little extra baking soda Chicken fried steak Cornbread Michael Ruhlman's dinner rolls You can also freeze the buttermilk so you can pretend you are going to make pancakes almost indefinitely. |

Those rolls look fantastic. I have never made fried chicken... probably something I should put on my bucket list (get it... fried chicken/bucket). I also like the freezer idea. I should probably do it in 1/4 cup servings for that salad dressing. Mary |

Those rolls are great. Even I (a non bread baker) can make them. Easy peasy. I think you can sub buttermilk for milk in almost any recipe. fitzie |

ranch dressing the buttermilk marinated roasted chicken from the NYT's biscuits- I love CI's drop biscuits! pancakes cakes- I love a buttermilk based cake. Dorie has a great one. Mashed potatoes are a great idea from above. homemade creme fraiche Yes to the cornbread! I prefer (1 cp cornmeal, 1 cup flour, 1 tablespoon baking powder, 2 teaspoons sugar, 1 teaspoon salt, whisked together. 1/4 cup oil or bacon fat heated in CI skillet at 450. Whisk 1 egg with 1 1/8 cup buttermilk. Whisk into dry ing. Pour half of hot oil into batter and stir in, then pour the batter in the pan. Cook until brown around the edges.) |
