Probably a little late. but:
1) Delicata are perfect for recipes which would normally use diced butternut squash or pumpkin, because they are smaller and easier to peel.
2) They are also perfect for stuffing, since halved lengthwise they make delightful little boats.
3) One Hanukkah, Firefly Restaurant in SF made some delicata squash "latkes", which were delicious. I don't have the exact recipe, but this one seems similar:
