Yeah, this is fascinating, thanks!
This tells us using mathematical analysis something which Southeast Asian cooks have known via heritage: you can make tastier food by balancing contrasting flavors. Take, for example, the Thai adage of "Hot, Salty, Sour, Sweet" which is supposed to go into each dish.

So now I have a scientific reason that I am addicted to these kinds of foods! LOL I have been saying for years that one of the main reasons for many of these dishes tasting so good is that there are so many ingredients used in them, and the layering of the flavors is something you don't get in recipes using a minimal number of ingredients. Sometimes simplicity is good, like with a fresh tomato off the vine, but many ingredients need a lot of flavors added, and it has always amazed me how the people from these areas have been able to make incredible dishes out of things that most people would not think of as food, by using all of those incredible seasonings.
Of course, one of the most important seasonings - capsaicin - didn't get to that part of the world until discovery of the new world. Amazing what they have done with hot peppers in such a relative short amount of time!
