Based on your helpful comments I went ahead and bought it. I've read it, and have never been so excited about meatless dishes. Between that and Jerusalem I have a bunch of different non-meat recipes I want to make. The first will be Roasted Roma Tomatoes and green lentils.

The tea cakes that are baked in the mini bundt pans are incredible. I made the honey lavender ones last night. The bit of cinnamon was perfect. They are so light and moist.

Thanks Becca, those caught my eye as well. I don't think I have mini bundt pans. Do you think they would work on Jumbo cupcake pans? I also have a small 6 Brioche silicone pan. Or just as regular cupcakes? TIA

I'd do jumbo cupcakes. That pan is awesome though, and I'm glad I'm using it.

I have a nonstick Nordic Ware bundtlette pan. I'm not sure where I got it though. I've had it forever.
