Had a glance through Manresa. I think there are lots of ideas in flavours and pairings that are applicable, even if the exact ingredients are not available; I suspect in many cases a straight high quality sub may be fine. Sure, I'm not going to be able to source Kid Goat easily, but another flavourful meat with a similar profile may well work. And it has lots of thought, etc. in it too. |

The only problem is that to do them authentically you need a Bouchon mold from W-S. I bought two of them with 20% off offers a while back b/c I make small bites sweets frequently and I'm glad I have them. And FWIW, the Oatmeal Raisin Cookie recipe in that book is absolutely the best I've ever had. (And thanks for the heads up, Amy. I might just have to somehow make room on my cookbook shelf and squeeze in one more ![]() Emilie |

I have a small popover pan which happens to work well for the bouchons (chocolate "corks" of brownie-like cake who knew?). I got the recipe off of the web. If you guys think that the book turns out to be worthwhile, maybe I'll pick it up. Nancy |
