I still vividly remember CK asking a morning show host to taste the chocolates he brought and to pick the "best" one, he did...CK corrected him and told him he was wrong...I fell off the couch

I've decided to purchase the Valrhona Cocoa...it comes in a 5 plus pound bag...how do I store it? It's warm and humid here...can I refrigerate it? Thanks again for all your help!

Lu, The cheapest way to protect the cocoa from excess humidity is to purchase a Ziplock Vacuum Sealer. Your local grocery store should have it. Amy

It was certainly cheap enough, so I bought one to experiment. Now that I have a chamber vac, I don't really use it much, but it does a very decent job of removing air from the bags (which are a little pricey). If you don't have a FoodSaver, this really is a bargain for prolonging shelf life of products. Amy

Hmmm. Think the FoodSaver vacuum jars would work as well? That El Rey cocoa is singing a siren song to me, but if I make the investment, I'll want to protect it.

I don't see why not. You may need to pulse it to make it work, but it's worth a try.
