BTW, Instant Pot is a little lower pressure then traditional PC, so you might keep an eye on the length of cook, though I've found most meat-style recipes for PC to be very forgiving in length.

Paul,
When I started researching these things, I noticed that all of the electric PCs are lower than 15 psi., some just over 10 psi. I thought that was strange.

According to Hip Pressure Cooking: Quote: A representative of an electric pressure cooker manufacturer shared that the quantity and quality of materials needed to reinforce electric pressure cookers to safely contain higher pressures during the entire cooking cycle would raise the cost of production to the point of doubling or tripling the retail price compared to current models ($100-$150 as of the writing of this article).
Reading that, article, some of it (such as the long release) would be greatly eased by using induction, as some of the rice cookers do. If the Japanese had a vital interest in pressure cookers, I'd bet we would have an induction based, fuzzy logic PC that could hit 15 psi and have a retractable cord. It would be expensive though.

I haven't noticed a huge difference in times for recipes between my Breville Smart pot and my stovetop cooker, but it's probably because I have an induction stove so have to make adjustments in the timing of PC recipes because of that. Given the choice, I use the electric one for most things now.

The instant pot is a big temptation for me, I'll admit for the easy streamlining. I have made PC a lot easier by using a very nice portable induction burner; I now know pretty much exactly what setting will hold pressure perfectly, so very little checking is needed.

Last night I had Red Beans and Rice made in the PC...love that recipe! So simple and it can be made easily with ingredients from the pantry and freezer.

Thanks for posting that link, Paul. That website looks to have a lot of great information and recipes. I already casually follow a couple of pressure cooking blogs but am really glad to add that one to my list!
