Sound like the bigger kitchen is letting you expand into new gadget realms! I can see the advantage of this over a plate though. I skip the flip altogether and just finish in the oven. We're a lazy frittata house.

Yeah, I've been doing the oven thing too. But sometimes the oven is busy, and you don't quite get the same shape/texture, especially for tortilla.
It's way better than a plate. The wood insulates, and the handle in the middle makes it way easier to grab. I'd been thinking of making something like it, but now I don't have to.
