You don’t need juju to make a cheesecake; you just need a reliable recipe. Ina’s baking instructions may work fine an many, many ovens but the amount of time it takes for an oven to drop from 450º to 225º can vary enough to cause some ovens to overcook the cheesecake even if the procedure if followed exactly. In this case, it is proper to blame the recipe because I believe that is where the blame belongs.
We discovered the Triple Citrus Cheesecake shortly after it was published and have not moved on yet except for an occasional pumpkin cheesecake in the fall. We have probably made it 10 times if you include the times we made as miniatures and it never gets less than rave reviews.

I think the Triple Citrus will be the next one I make. I was almost held at gunpoint to make a "normal" one. I made a South Western Cheesecake (appetizer) for a friend's birthday and there was much moaning about me not making "plain, regular" things (although they wolfed it down). I think I will put all cakes at bay for a while though, I am in a bit of a sugar shock.
