A friend of mine and I went to Zingermans on Saturday. It was around 2 and it was so busy . We got to sample some 25 year old balsamic vinegar. It was very good. I also sampled some cheeses. Before giving me a sample, I noticed that the girl was taking a knife and scraping the side of the cheese. I asked her what she was doing and she said she was facing the cheese and explained to me that she was removing the butter fat that accumulates on the surface. This was new to me. I guess the butter fat accumulates when they wrap the cheese in plastic which they have to do to for the health department. I bought a variety of Swiss that cost me $10 for 4 oz. It is so good. I also bought some Corned beef, a loaf of Pumpernickel Rye, Graham Crackers, homemade marshmallows and a bar of 70% Honduran chocolate. It's probably a good thing that they are 90 minutes away.

It's so easy to get carried away in stores like that. You figure, "Heck, I'm 90 minutes away, I'd better stock up while I'm here". Been there, many times.
