Post subject:  Teacher Appreciation Lunch... Help Me Clinch It.

I need to make 2 dishes for a teacher appreciation lunch this Friday. One salad and one savory. I am going to do Nance's pea and mint salad but need an idea for a savory dish that can be served at room temp as they will not be heated. I am still basking in the glory of the chocolate fountain and therefore don't have the resources for coming up with any good ideas. Anything?

Sadly no kale... I see about once year for a week or so in the middle of winter. I am not sure if I have ever eaten it...

Didn't someone here post a recipe for antipasti skewers??? I looked in my recipes and couldn't find it. Sushi is a good idea too.

What about a savory crustless quiche? You could make it in a sheet pan and cut it into finger food portions. I have a recipe for a zucchini pie (at home) that I've used for similar occasions. Will send to you tonight if you're interested.

I have tried that tart but the puff pastry I get is different and doesn't seem to do it justice. It is too thin and crispy. Great for other things but not the tart.
