If your concern in blood cholesterol, cocoa fat (butter) has not been shown to contribute to it. So you're only really worried about the addition of dairy fats to the bar, which do contribute.*
The answer to this is to eat really dark chocolate, like 80-90%, with no milk solids in it. Further, if you eat really dark, rich chocolate, you can be satisfied with a much smaller quantity. Frankly, I
can't eat more than a couple squares of Rechutti or Tcho at a time.
