I have been thinking I should make some kind of flavored mustard for Christmas presents. Anyone done this? I have been looking on line but haven't found anything that thrills me.

Mary,
I've done garlic-dill mustard, and sweet-hot mustard for Christmas gifts. Unfortunately I'm not sure where the recipes I used are; it was like 8 years ago. If you haven't made mustard before, though, you're going to need a very well-ventilated area; mustard will gas you out of your home otherwise (I speak from experience).
What did you have in mind?

I didn't have any firm ideas. I did want to start from seed not powder though.

Guiness spicy mustard is good. Recipe is in Saveur. They also have a section on how to make your own condiments. Looks interesting.

Mary,
You can use whole seeds, ground seeds, yellow or brown mustard or a mix. You're going to need to crush at least some of the seeds to get the mustard to thicken up.

I want to get the seeds at an Indian grocer as they are a much better price and I can buy them in bulk. I would love to see you recipes.

One more question... How far ahead should I make this. For some reason I thought there was a long "cure" time but the recipes I've seen seem to say otherwise and also that the shelf life is not all that long... Your thoughts?

Couple days, really. Doesn't need any more than that.
And yeah, you should go somewhere you can buy mustard seed by the kilogram. You need a lot of mustard seed to make a decent mustard.
BTW, I do actually have a mustard recipe book. I just haven't been able to locate it yet and haven't had much time to look.
