I've got a creamy six onion soup recipe that I really like...but it's at home. Let me know if that interests you or if you're looking for a French Onion-type soup.

Wino, You should begin by using Kenji Alt's method of caramelizing yellow onions. It is wonderful. Follow the first two steps in his recipe for French Onion Dip. You can link from there to the Food Lab for explanation of the methods. http://www.seriouseats.com/recipes/2011/01/real-french-onion-dip-recipe.htmlFollowing that, you need some good clear beef stock and any decent recipe. I've done Keller, Julia, CI, Betty Crocker (! Hey, I was an undergrad!), etc. I was just thinking one of you weirdos might have an extra ace up your sleeve (s)  I love CI's method for caramelizing is Kenji's that much better - faster, tastier, whatever? Darcie - I wasn't thinking of a variation but that sounds TERRIFIC! Yes, please, with sugar on top - if you have the time!!

I have a vegetarian one, but its main virtue is that it doesn't taste vegetarian. So I'm not sure how much it'll actually do "different" for you.
