 Post subject: Baked Grits

Can I cook up grits the night before, put them in the fridge, then add the cheese and eggs in the morning and bake? I'm gonna do it anyway, unless someone tells me that they tried it and it was an unmitigated disaster.

I am not Crystal.

If I am keeping moister oatmeal overnight, I sometimes put plastic wrap on the surface so it does not get a sort of gluey skin formed. It seems like this might work for grits too.

Lol, sorry, I don't cook grits. Jes, I'll check make ahead and see what it says. Still giggling.

Edit. Nada. I don't see why you can't cook, cool, press plastic on to surface, rewarm and bake. However, see above. No grits, no polenta.....

Mom used to make grits, put them in a loaf pan, refrigerate, then slice like bread and cook till brown in butter...mmmm. :P
