Here's the recipe for the Pea/Sorrel/Mint Salad with my notes below. So incredibly easy and refreshing:
Fresh English Pea Salad w/Mint/Pecorino Serving Size: 6
2 cups water* 1 cup shelled green peas (about 1 lb unshelled)* 6 cups trimmed arugula** ¼ cup chopped fresh mint 1½ tablespoons fresh lemon juice 1 tablespoon olive oil salt and pepper ½ cup shaved fresh parmesan cheese (2 oz)
Bring 2 cups water to boil in a medium saucepan. Add peas; cook 1 minute. Drain and plunge peas into ice water; drain.
Combine peas, arugula and mint in a large bowl. Add lemon juice, olive oil, salt and pepper; toss well. Sprinkle with cheese. Serve immediately.
*2nd time used thawed frozen petite peas. Very good. 6th time used reg size thawed peas. Even better! **2nd time used Sorrel from my herb garden. Delicious!! 3rd time used spinach. Delicious every time.

oooh, that looks good.
Will have to try once the fresh peas come in.
Title says pecorino, recipe says parmigiano. Which should I use?

I usually use Pecorino Romano. But since it's such a forgiving recipe I would use whatever you have and/or what your palate prefers.

Thanks for the recipe! Will try it soon, probably use dandelion greens from my yard since they seem to be popping up as soon as the snow melts. If you can't beat 'em, eat 'em!

I used the frozen mini peas and didn't bother to boil them, just put them in a sieve and ran water over them to thaw. I took it to a school function and the salad was one of the first things to be finished (I only got one tiny scoop).

Nancy, the Pea salad was a hit! Everyone loved it. I used spinach which held up well. I saved the last little bit thinking I'd eat it as a bedtime snack and then forgot about it. I had it this afternoon (a day later) and the spinch was still quite crisp. It was almost as good. Thanks, I see this as a great summer salad for the entire season. Great to take to a party too.
