I'm feeling stumped. Going to a friends on Saturday night for dinner and I'm bringing dessert. Originally I was going to make gingerbread but hubby doesn't want that. :-(
I've brought the CI peach and blueberry gallette with homemade ice cream to these friends before, and an assorted tray of biscotti and toffee.
4 adults, 4 kids but all the kids have adult tastes pretty much, just nothing boozy. I don't know what the hostess is serving but she's a great cook and hostess so we are typically not all too hungy by dessert anyway.
I have to make it Friday night or Saturday morning/late afternoon. But won't have time before then.
I just saw the peanut butter cupcakes on SE and they look good, but I'm not great with cupcakes normally. They sink, or puff up too much, or they are too dry.
Any suggestions?

Serve the ginger bread topped with warm apple compote and sabayon or zabaglione flavored with Calvados. It will never be vetoed again. Canned apple pie filling and cool whip can be substituted if it sounds to much like a pretentious little foodie dish.

These are in my top 10: Nathans Lemon Cake (5 stars from the husband), Gateau au Citron (Orangette blog - delicious), and Apple (or Pear) Clafouti (easy, beautiful presentation, seasonal and of course delicious). Let me know if you want any recipes.

Leche Flan? Make in cups, chill, turn out after you get there, so travel is fairly easy.

I'm normally really sucky at dessert ideas, as my ideas are usually too fussy. (Hazard of the job I guess.) But, one of my favorite easy (and totally delicious) desserts is Glace au Chocolat Pralinée from Mastering, Volume 2, page 421. I don't make it in a "Le Kilimanjaro," conical mold but in a loaf pan, so I can serve it as slices with the Chantilly Cream and pralinée.
