 Post subject: Greek Salad Dressing

Just about 30 years ago now, we moved to Maine, all in all a good move. But you do miss things from the city. When we lived in Westford MA there was a little place, I think they did pizza's sandwich's and the best Greek Salad. The key is like most things in the dressing, I would always try to get extra, they were not happy with me. I never have had a dressing anywhere near as good. I tried another one today and it wasn't even close and they sounded so authoritative.

Does anyone have a great Greek Dressing?

Could this be in Chelmsford or Billerica? I remember a place with lamb chops with 10" long rib bones.

....and now I am craving Peter Reinhart's Greek pizza. It is pizza dough, brushed with amazing scratch Greek dressing, baked, sprinkled with cheese, then you take it out and top it with Greek salad (romaine, tomatoes, cukes, olives, etc.)

It is absolutely wonderful. The recipe is from American Pie.

I don't use a recipe, but I use EVOO, fresh lemon juice, salt, pepper and dried oregano....I think its pretty good with romaine, red onions, feta, greek olives, tomatoes and cukes.

Wow Tim you really know the area. Actually if you go one more town after Chelmsford you will hit Westford. However both my wife and I are from Billerica and it is where we met, not that it was a hard thing to do, we lived very close. I don't remember the ribs your talking about. It wasn't exactly a culinary center of Massachusetts. It is a lot more upscale now than it was when we lived there. I still don't think there are a lot of nice places to eat, we had mostly sandwich shops some were pretty good, but I never remember sitting down for a meal kind of thing without going closer to Boston. Burlington had some good places, futher into Arlington even better and of course Cambridge had every ethnic represented and had great food. It is closed now but the best place I ever personally enjoyed was the "Cafe Budapest" Copley Square Boston, the real high rent district so it was easy to drop a couple of hundred without blinking.

Thanks for the trip down roads traveled in the past, we don't get in that area very often.

Ilene that sounds refreshing, it is pretty close to the one I used today but it had a 1/2 cup of Evoo and I think it was the oil that I didn't like so I will give yours a try.

I don't typically measure, but its about 2/3 oil and 1/3 lemon juice....more or less depending on how much acid you like.

1/2 cp evoo
3 tablespoons red wine vinegar
3 tablespoons lemon juice
7 greek olives
2 tablespoons olive brine
2 cloves garlic
1/3 cup feta
1 scallion, chopped
1/8 teaspoon pepper
1/8 teaspoon oregano

Combine all ingredients in blender and blend until smooth.
