I'd be running them through my VitaMix, then straining and draining.

The restaurant you visited likely used commercially available strawberry puree, which is what I'd use if I were to make this at my restaurant. These purees are completely natural and contain very little residual water from the fruit.

As this is a home experiment, I'll use the equipment I have to see if I can replicate it.

Sorry, here's what I meant...

With a VitaMix you get fairly fine purees, however, it can still be strained for any particulate matter not wizzed into oblivion by the VM. Meaning, I would push the VM wizzed puree through a sieve to dislodge anything left. I'd then let that mixture (the stuff that went through the sieve) sit in a cleaned sieve and let it drain for an hour or so to lose any remaining unwanted moisture.

Does this make sense? I hope so...I know I'm not always clear.

When do the strawberries peak on Long Island? I now they are a pretty big deal there and I'll be there in a couple of weeks. Might have to pack a few home.

Sadly, because of the late rains and generally weird weather, this is the second year of having a crap California strawberry crop in a row. :-(

FYI, Fine cooking had an article several years ago by Joanne Chang re: creme brulee and other custard like things. Her recipe makes a great one.
Maybe it's on the website.
