Just made my Cuban black beans (1 lb.), less than 60 minutes from start to finish including cutting aromatics, etc., and cleaning up. (I had presoaked the beans a couple of days ago). Now cooling then half will be frozen for later use. They are even better after a couple of days in the fridge or being frozen. I used my old Presto 6 qt. with no fancy sensors, goes under cold water to bring pressure down.

I'm loving this speed thing. This week I'm going to try making beef stock for onion soup. DH's 40th is on Monday, so he wants onion soup, beef stroganoff, egg noodles and green beans, and Ina Garten's banana cake with cream cheese icing for his comfort food dinner.

I guess the slow cooker revolution is being overtaken (or at least under pressure) by the fast cooker one....

I love my slow cooker...but these days I'm just not organized enough to get it ready to go in the morning. Or the night before for the morning...what I like is that the pressure cooker doesn't require me to plan ahead.

In the OBB MJ posted a great recipe for Braised Beef with Anchovies and Rosemary which was made in the slow cooker. It was easy and wonderful, in the slow cooker, but you did need to think ahead. Next time, I made it in the pressure cooker and it was just as good and way faster. I did the searing in the PC and then added the rest of the ingredients and cooked it, then reduced the liquid without pressure at the end.

Alina, that's the one from Italian Slow cooker, right? I ordered that (like new) from Amazon but it's at my brother's place, I won't see it until American Thanksgiving. But that's one of the recipes I'm looking forward to trying.

Jean, I'd be happy to post it for you (the slow cooker version since the PC version I did in my head). I scaled mine for a 4.5 lbs. roast since that is what I have, but I can scale it back to 3 lbs. (6 servings). Just let me know.

Alina - I am curious about the cleanup after the Braised Beef especially since you seared it before PC. Was there scrubbing involved?

Thanks Alina, I will let you know if I want to make it befoe the book gets here. I'm currently in denial that cold weather is coming, so still making summery foods.
