I can't buy real stracchino cheese, a soft (semi-liquid, actually) Italian cheese here because it's a raw milk cheese aged only about a week.
However, I haven't been able to find a recipe for it either; Cheese Making doesn't have one and Google fails me. Anyone have other sources of cheese recipes?

This might be a stretch but, I just picked up a book "The Cheese Chronicles", by Liz Thorpe, after hearing her do an interview on NPR. She works at Murrays Cheese shop in New York. They seems to know everything about cheese,and then some. They have a website http://www.murrayscheese.com/edu_faculty.aspThey have classes on cheese. It sounds very interesting. I know zero about cheese and this book is very interesting so far.......hope this helps maybe......Karen

Ooooh, thanks. It even has links to a cheesemaking page in Italian which has instructions for other Italian cheeses.

If you want a laugh, try translating them by bablelfish. I'll see what I can do; my Italian reading ability is about first-grade level ...
