We received a 3 pound block of Extra-Sharp Cheddar Cheese for Christmas. I've used 1 3/4 pounds for two lunch parties - in cheddar cheese & beer soup, and then in a ham & mac n' cheese, but I've still got 1 1/4 pounds left. I'm not a big fan of cheddar cheese, especially uncooked, so am looking for some ideas how to use the rest. Anyone got an idea or recipe?

Cheddar is one my least favorite cheeses as well. My favorite use is in cheesy cauliflower soup, but don't mind it in pierogies, enchiladas, twice baked potatoes or mashed potato casserole, red lobster rolls, cheese broccoli and rice casserole, and arroz a la milanesa.

I make these cheese wafers and serve them as a nosh. They're always well received (ask Darcie). And, the logs freeze beautifully. Amy

I like the idea of freezing these - sounds like they'd be good to have in reserve.

I love extra sharp cheddar! It's great in quesadillas, grilled cheese sandwiches, nachos, burritos, dips, soups, etc. This is really good - best when heated: THREE CHEESE GREEN CHILE SPREAD http://www.recipezaar.com/19079Here's a delicious chicken recipe I made with several tweaks. Lindsay,
Cheddar is excellent for cheese souffle. A single cheese souffle and a salad is an excellent dinner for two.
Also, Nigella Lawson has a cheese-and-onion pie recipe in Domestic Goddess which is quite good.
Finally ... grilled cheese. With caramelized onions and a little mustard.

I posted a cheese shortbread recipe link in the calamari thread that is very similar to the one Amy posted but made in the f/p. I grate and freeze cheese on baking sheets then bag when frozen for mac and cheese, grilled cheese, etc.

Great ideas - hadn't thought about a souffle, which actually sounds really great - and the grating and freezing in a bag also sounds brilliant. Ever since I started freezing mirepoix in single bags, it's amazing how I really do use it for additional flavor.
