Only sort of related, but I used to broil chicken breasts from frozen. It gave me enough time to get a really good caramelized exterior while not over-cooking the inside. They were always very juicy.

We bake our wings here also. 20-25 minutes at 500 degrees, turn after 10 minutes (release foil and a self-cleaning oven are both essential).

Bumpity We have fallen madly for these and since it is "SuperB Owl" food: Lime-Chili Grilled Wings 1/4 cup freshly squeezed lime juice 1 tablespoon virgin olive oil 2 teaspoons chili powder 2 teaspoons ground cumin 2 teaspoons salt 3 tablespoons chopped fresh cilantro or parsley or both 12 chicken wings, tips removed
Combine lime juice, oil. chili powder, cumin, salt and cilantro in a large bowl. Add wings and toss to coat. Cover and refrigerate 2 hours, turning occasionally.
Prepare a charcoal or gas grill for medium-heat grilling or heat a grill pan. Grill wings until browned and cooked through, about 20 minutes. Serve hot.
Approximate nutritional value per serving: 2 g carbs, 1 g net carbs, 1 g fiber, 20 g protein, 7 g fat, 150 calories. Makes 4 servings. Wino, I think you just saved the day...I was informed that the hostess of the Super Bowl party is rigidly following a low carb diet and the wings I usally make calls for honey. I am going to try them, even though my friend is gracious enough to say, "bring what you typically make and I will find other things to eat". I hate bring food that no one, especially the host won't eat.

I've had a hankering for wings lately, too. Well, even stronger then usual. Wino, I take it you have been baking them from the 375 comment? Mind you, the weather has suddenly gotten warm (well, relatively speaking) so firing up the barbie is not out of question at all.

Yes, sorry for not noting that; we are baking them. We have been following Atkins for a few years and I am quite impressed by many of the recipes in this book, The New Atkins For A New You Cookbook (2011) I'm thinking of starting a new thread here just for Atkins ideas... Yea! Nay! ???? Low Carb Grocery in Canada, http://www.thelowcarbgrocery.com/ is an excellent mail order source for compatible treats.

I'm not doing it now (even though it works), but when I was I really liked George Stella's books. Karen Barnaby's Low Carb Gourmet is also good.

I made chicken wings tonight (and pizza from the Lahey dough). Brined them, dried them off, dusted in a mix of ap flour, rice flour, s&P and then deep fried. 2/3 were tossed in Frank's Red Hot and butter, and the other half in a combo of 2 prepared BBQ sauces (Bullseye and Diana Chicken and Ribs). Yum, yum, yum.
