Adding - Amy is right, homemade mascarpone is easy and delicious! You could use that in place of the cream cheese in the CI recipe...maybe use a little more if it's not as stiff.

Darc,
I made some more mascarpone last weekend, and we used the leftovers to make a mascarpone/mustard sauce for some chicken I'd done SV. Was really delicious.
