We have very hard city water, and we have to use citric acid in the sous vide water so it doesn't damage the innards of the Nomiku. I wouldn't want to throw it on my plants. I have used it to wash dishes but it really isn't convenient. I'd like to find a better vessel of some kind. I may look into cambros.

Sounds like you want an asparagus pot.

I just keep the water in the pot for quite a while until I screw it up (labels being the most common, occasionally a contaminated bag)

I am using an Asparagus Pot. That is what the 4th Burner pot is designed for, including a wire strainer insert. It still is only about 10" tall and I need it to be around 12". Maybe I will look into a Cambro... Thanks for the ideas though! If anyone else has any thoughts, let know! --Lisa

I guess I don't understand this. Why do you need a taller pot? Doesn't the Nomiku draw water from the bottom? I are confused.

The water level needs to be between the two openings in the metal part (see image). If I use too short a pot the water level goes over the top opening and without air it won't circulate. Oh. I haven't encountered that problem with the Sansaire. But I've only used two pots of similar dimensions.

I have not had the problem with the Sansaire either. I used and All-Clad 8 qt. dutch oven to poach 4 fish fillets and it worked great.
