Made this summer's first batch of pesto today. Have a lovely crop of basil which I usually plant in windowboxes to keep the critters away from it but this year I put it in boxes in the garden. Rinsed a couple of handfuls and patted them as dry as I could get them with paper towels and left them on the counter for about an hour. An hour later they were so limp as to be unusable. How do you guys do it? When it's in the windowboxes I don't wash it so haven't had this problem before.

If you want to keep them crisp (though it seems unnecessary for pesto!), wash them then spin them dry - patting them dry probably bruised them, which basil does easily. This way you can get all of the water out, before making the pesto.
