Speaking of praline...okay, we weren't until Tim got us going in that direction... :D

One of my all-time favorite ice creams, okay so it's a mousse, is JC's Le Kilimanjaro. As she describes it, a "chocolate-burnt almond ice cream. I don't mold it the way she does (to resemble the mountain...hence the name). I mold it in a loaf pan and then cut slices. It's served with Chantilly cream and praline. Serious yum.

this thread reminded me of soccermom's raving about Gale Gand's burnt caramel ice cream which I wanted to try and didn't. now I have another one to add to my list.

Tim, thank you for the recipe, it sounds wonderful, that book just went on my "buy it" list. The only problem is that I do not own an all copper pot...

I am also craving ice cream and and not even had my coffee yet.

I love salty caramel ice cream. I had some at Jeni's in Ohio last time I was there. Right now though, this thread is just making me cold(er).

I want a copper pan (or 2 or 3), but the metals market is going to have to look less like the 2005 housing market and more like the 2010 before I can afford it. ;)

The ice cream base is on the refrig. I made it yesterday along with the caramel, this is the first time I have made a "dry" caramel, very interesting.

I will be putting it in the ice cream maker shortly, cannot wait!

I prefer making dry caramels, but living at high altitude, it's exceedingly difficult, so I typically have to make a wet one, and even then if I don't add corn syrup the likelihood of it crystallizing is extremely high. There are a few things about cooking at sea level I really miss...making caramel is one of them.

This ice cream is wonderful. It has a delicate flavor and the caramel salted pieces give it a fabulous texture and taste.

Thank you again Tim, this will be made often!!

Although I do have to say that nothing matches Amy's Fleur De Sal caramels.....
