and he's worth a very big celebration!
Appetizer: Smoked Salmon Waffles from Around My French Table.
Main: Tournedos Rossini - filet mignon with foie gras on toast with truffles served in a Madeira sauce. I'm sourcing the foie gras as I type this; I doubt I'll find truffles so I will flute cremini mushrooms instead.
Sides: celeriac puree & steamed haricots verts.
Dessert: Peach Melba Roulade.
Oh and of course, plenty of red wine!
