Folks,
I stumbled across some genuine Seville Sour Oranges at the 22nd & Irving Market the other day, and snagged them because it's one of those regional ingredients I can never seem to get my hands on.
Except now I'm not sure what I wanted them for. I've paged through my Spanish cookbooks but can't find the recipes I didn't make because I didn't have sour oranges. Anyone have any recipe recommendations?
(p.s. for future note, real sour orange juice tastes almost exactly like a mixture of half lemon juice, half sweet orange juice.)

Sorry, I did find a reference to cakes flavored with sour oranges in The Cooking of Spain and Portugal, but no recipe.

Pernil (a latin long-roasted picnic pork) is made with sour oranges as a marinade ingredient. I've made this several times and got the recipe this last year from the NYT. Very delicious. But I used the Goya sour orange marinade since we don't have access to sour oranges here. Let me know if you want the recipe. Nancy

I thought that I remembered that you were vegetarian which I am too, most of the time, but mostly because I just don't care about the tastes. But Russ (my DH) really loves his braises and roasts so I do what I can to satisfy the taste buds of my favorite person. Nancy

In Mexico sour oranges are cut in half, salted, coated with a paste of hot chili peppers, and eaten.

Hi Fuzzy, I just read a recipe today from the Jamie at Home book by Jamie Oliver. The recipe is for a salad with avocado, roasted carrot, greens, croutons, etc. He roasts some oranges halved, along with the carrots. The juice from the oranges then becomes a basis for salad dressing. It really looks wonderful, he makes a rub with cumin, olive oil, etc for the carrot roasting. If interested I'll write it down for you here.
Marmalade, yes. An essential ingredient aren't they? What a nice find a winter day.

No, I don't. I have 3 other Spanish Cookbooks, though, so if you just point me towards some dishes I can probably find them in what I have.

D'oh! Since they were getting old, I already juiced them and froze the juice. Can I still make the dressing?
