All, This one from Culture Cheese Magazine. I don't even remember what I had to do for it (contest was 3 months ago); description of my favorite cheese, I think. Anyway, I will soon be the proud (?) owner of a beechwood rotary cheese shaver and an entire Tete de Moine cheese. Darcie,
It's fairly pungent, somewhere between a swiss cheese and a camebert. Partly because of the presentation, tete-de-moine is standard in the cheese course at NY steakhouses. At least, it used to be.
It's strong enough to be a cheese you generally consume in small amounts, like 1/2 oz servings. What I'm going to do with 2lbs of it, I'm not sure. I hope it keeps ...

That is a good cheese. The shavers were very popular when I first moved here but I never got one (also thinking of the size of the cheese). You can buy the cheese already shaved though, looks great on a cheese plate. They also sell blocks of chocolate that fit onto the machine too.
