At culinary school I often commented that the difference between a good cook and a chef wasn't where they stood in the kitchen-on the line vs. on the pass, but how they thought about the food. The cook is concerned with getting that steak or fish to the right temp, but the chef is thinking about the flavor, the texture, etc. One is a skill set, the other is a mind set.
