Todd,
I'm not so sure. The pureeing the beans, and the cream cheese, seem wrong and likely to be unpleasant. +1 on the general idea of "Santa Fe chili & dumplings", but I'm not so sure about the actual recipe.

Frank, while I am not likely to ever turn down a good bowl of chili, I have decided that I hands down prefer chili without beans.The new CI chili was fantastic, but I found myself wishing I hadn't added the beans... It just totally throws off the texture of the chili.

I too made the latest CI Chili (no beans of course  )...the texture, and color were VERY good, the flavor had potential but certainly needed a boost...not uncommon for CI, with the exception of their chicken fajitas they usually do a very poor job at Mexican dishes. At least by Mexican / Texas standards...but...what do we know? New England knows what we should like...Makes about as much sense as me telling them how to make chowder.

Quote: do a very poor job at Mexican dishes Usually, I agree, but did you try the Enchiladas Verdes? I switched out the corn for flour tortillas, and used pepper jack, rather than jack. Was really very good. Out of curiousity, where do you stand on Chile Verde? My personal favorite....
